This is yet another really quick and easy to make meal, which I always thought was complicated and something only my mum could make.  Yes.  That really happened.  I too feel sad for me.

How to Make a Pizza from Scratch

Ingredients: {the ingredients used equal enough to make one 30x32cm pizza, or 2 smaller and thinner pizzas}

Pizza Base
1.5 mugs of self raiding flour (plus extra for dusting)
0.5 mug of tepid / warm water
Small lug of olive oil

Tomato Topping
1 x 400g tin of chopped tomatoes
1/2 clove of garlic
Splash of red wine vinegar
Drizzle of extra virgin olive oil
A little basil
Pinch of salt

Ok, so let’s start with the tomato topping  (you can use a premade one if you like).

Empty the tin of tomatoes into a liquidizer / food procesor

Add the basil, peeled clove of garlic, red wine vinegar, a pinch of salt and a splash of extra virgin olive oil - I don't know why but I have a habit of always adding tomato puree (I don't even really know what it's for!)

Liquidize until smooth

Seive 1.5 mugs of self-raising flour into a bowl

Then, half-fill the same mug with tepid water and mix into the flour

Add a lug of olive oil and knead the dough (or, if you're lazy, use a bread maker or food processor)

Dust a large frying pan with flour and place over a medium heat

Knead the dough until firm and form into a ball (or whiz in your lazyass food processor until it's smooth)

Dust a clean surface with flour, tip the dough ball onto this surface and sprinkle the dough and a rolling pin with a little flour (as it will be quite sticky to start). Roll the dough until it's about 1cm thick

Move the flat dough over to your heated pan (the easiest way to do this is to gently fold it in half, then unfold when you get to the pan). Fold the edges of the dough inwards to create your crust - I always stuff with mozzarella and this method makes that really simple (just cut slices of mozzarella and roll the dough edges over it).

Turn the heat down on the frying pan for a few minutes. This is usually when I prepare my toppings. You will be able to tell when the dough is cooking as the base will start to stiffen. Yes...this is chicken, not the pizza base.....I'm preparing my toppings. Keep up.

When the base starts to stiffen pour over your tomato sauce topping

Spread the topping to the edges

Add your toppings - I recommend pre-cooking any meats - if you're replying on the oven-cooking part of the process to cook your meat you will over-cook the pizza base

If you're frying pan is ovenproof move it straight to the grill, if it isn't then carefully slide it from the pan to a baking tray and place under the grill for 4-5 minutes

Prepare your side dish/es

Remove the pizza from the grill and serve! See, it wasn't that difficult, was it!?
